Malai Kofta


Delectable koftas in a creamy gravy. My most fav. paneer dish. though it is a bit heavy but I love it. So I prepare it on spl. occasions. The specility is when you cut the koftas, you find malai and dry fruits in the center……………..
 
Ingredients:Paneer 200gms  grated
Potatoes 2 boiled and mashed
Onions 3
Tomatoes 3
Ginger paste 1tsp
Garlic paste 1tsp
Cashews 15
Raisins 8
Cream or malai 3tbsp
Cumin seeds 1tsp
Red chilli powd. ½ tsp
Salt to taste
Kitchen king masala 1tsp
Butter 3Tbsp
Method:Slice onions lengthwise in to thick pieces. Take butter in a pan heat it and fry onions into it till they are brown in color. It will leave all the butter and get almost fried. take out the onions and, Keep aside to cool.
Fry 10 cashews in the butter. Take out and let it cool.
Cut tomatoes in big pieces. Grind tomatoes, onions & cashews finely to a smooth paste.
Mix grated paneer, potatoes and 1/2 tsp  salt and red chilli powder and make a smooth dough by kneeding it properly.
cut 5 cashews and raisins in small pieces and mix with 2 tsp of cream.
Take about 2 tbsp of the dough on on palm and flatten it a bit and place 1/2 tsp of cream-cashew mix in the center and close it neatlylike a cutlet.
Heat oil in a kadahi and fry these koftas in hot oil till they are golden brown.keep aside.
Reheat the remaining butter in the pan(in which we fried onions and cashews). No need to add extra butter to it.
When the butter is hot add cumin seeds to it. When they crackles, add tomato masala to it.stir fry for 1 min. add ginger and garlic paste to it and stir for 2 mins.
Add red chilli powder, salt, kitchen king masala and stir for 2 mins. Add 1 cup water to it stir and let it boil. Let it cook for 2-4 mins. Turn off the gas. Add 1 ½ tsp of cream to it and stir lightly.
Gravy is ready , pour this on koftas only at the serving time
Garnish with cream and coriander leaves
Serve hot.

    malai kofta is my most fav dish i tried it the taste was very good but they got scattered in the oil please tell me where i made a mistake
